Begin by heating the oven at 200°C (400°F)
Beat together the eggs, including the whites, and milk, then set aside.
Choose 4-5 medium-sized bell peppers, cut them in half, and remove the seeds. Set aside.
In a large pan, heat the olive oil on medium heat. Add in the onion and cook for a few minutes until softened.
Add in the ground turkey, oregano, sweet paprika, and basil. Season with salt and pepper and let it cook for 5 minutes until the meat is cooked.
Mix in the spinach and let it cook for a few more minutes until it wilts.
Add in the egg and milk mix and increase the heat. When it starts to scramble, start to mix gently. Continue until the eggs are cooked thoroughly.
Stuff the turkey and scrambled egg mixture in the bell peppers and place them in a baking dish.
Grate the cheddar and sprinkle on top of the bell peppers.
Bake in the oven for 20-25 minutes, until the cheese melts and forms a nice crispy texture, and the peppers are tender. Depending on your oven, you might need to leave them a few more minutes.
Once cooked, let it cool for a few minutes and sprinkle with fresh parsley to serve. Enjoy!
